Chocolate Chip Cookie Love - Grain Free!

I've been feeling adventurous lately in the grain-free baking realm, and trying out new recipes on a regular basis. This one is a compilation of a couple I found online, and it turned out kind of cake-y, but still really tasty. I do love my cookies, so I'm not complaining.

Ingredients
  • 1 cup Nut Butter - I use Almond or Peanut
  • 6 Tbsp Butter
  • 4 Eggs
  • 1/4 cup Coconut - the unsweetened, dried kind (you can use the pulp leftover from making milk if you want, but I would reduce the Butter and Lemon by just a bit)
  • 1 tsp Baking Soda
  • 6 packets Sun Crystals or other Stevia product
  • Juice from 1/2 a Lemon
  • 1 cup Chocolate Chips (or more if you are like me and prefer a little cookie with your chocolate chips)

Directions
Mix all ingredients together well, and drop spoonfuls onto parchment-lined or greased cookie sheet. Bake at 350 for 10-12 min. Cool and eat!
