I serve Sweet Potatoes as a main dish with a fresh salad and Roasted Veggies on the side. My kids love them! Here are a variety of ways we eat them around here:

Ingredients
- 2-3 lg Sweet Potatoes - peeled
- 3-4 Tbsp Oil - I use Coconut or Peanut usually
- S&P to taste
Directions
Using a mandolin with the 'Thick Julienne' blade over a large bowl, cut the sweet potatoes into fries. Toss with Oil and S&P. Bake on cookie sheet at 400 for 10-15 min, turning them half-way through. Sometimes I'll broil them for the last minute or two just to help brown them a bit. My kids love these dipped in BBQ - yum!
- ROASTED -
Ingredients
Directions
Toss diced Potatoes in Cinnamon until well coated. Roast on cookie sheet at 425 for 10-15 min until desired tenderness. Serve with a tiny drizzle of molasses for extra yum!
- BAKED -
This one is even easier than the others. Scrub enough Sweet Potatoes for your family. Poke a few holes in them with a fork. Bake at 350 for 45 min or until done. Serve with a generous bit of Butter, a drizzle of Molasses and a dash of Cinnamon.
