So my birthday is this week, and when Matthew learned that the first thing he said was, "Can I have some of your cake?" Love the one track mind of a 4-year-old.
I wasn't going to make a cake, because honestly it's no fun to have to make your own birthday cake, but being mostly grain-free I can't really expect someone else to make a cake for me. :) But I didn't want to let my kiddos down since they were now excited about it, so here's the one I decided to make. It comes from Elana's Pantry and was super yummy, especially with the Chocolate Ganache frosting ... Heavenly!
Ingredients
- 1 cup Dark Chocolate Bits - I usually crush a good quality dark bar
- 1/2 cup Coconut Milk
- 2 Eggs
- 1 1/4 cups Almond Flour (not meal in this one)
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 1 cup White Chocolate Chips
Directions
Melt Semi Sweet Chips with Coconut Milk in a medium saucepan over very low heat. When chocolate is completely melted, remove from heat and stir in Eggs. Then stir in Almond Flour, Salt and Baking Soda. Fold in 1/2 cup White Chips. Pour into a small greased springform and sprinkle remaining White Chips over the top. Bake at 350 for 20-25 min, until a knife inserted comes out clean (of cake crumbs, not of white chocolate). If necessary, slide a knife around the pan to release the cake. Remove it from the pan and cool completely.
While cake is cooling, make Ganache Frosting.
Ingredients
- 3 Tbsp Butter
- 1 cup Dark Chocolate Bits
- 1/2 cup Cream
Directions
Melt Butter in small saucepan over low heat. Stir in Chocolate and continue stirring until completely melted. Slowly stir in Cream a bit at a time until desired consistency is reached.
Frost cooled cake with Ganache, then place cake in fridge to set the frosting.
