I love cauliflower anything. Now that it's getting cold, all I want is soup - thankfully I have this delicious Cauliflower Soup recipe. The main idea came from Joyful Abode (she's great). So good!
Ingredients
- 1/2 stick Butter
- 2 Onions, chopped
- 3 Carrots, chopped
- 4 ribs Celery, chopped
- 2 heads Cauliflower, chopped
- 1 quart Chicken Stock
- the other 1/2 stick Butter
- 1-2 cups Heavy Cream
- Garlic Salt
- Black Pepper
Directions
Melt half a stick of Butter in a big soup pot. Dump in the Onions, and cook them for a while. Add the Carrots and Cauliflower. Stir around, cover, and let cook for 15 minutes. You don’t need to add water or anything – there is enough moisture in the pot to steam them.
After your veggies are all cooked, add your Chicken Stock - enough to cover the veggies. If you need more than the quart, add a bit of water. Bring to a simmmer.
Add the other 1/2 stick of Butter and the Cream (one time I didn't have any cream and I used a brick of Cream Cheese instead - it really was just as good).
Puree with an immersion blender or in batches in a regular blender until desired consistency is achieved. Season with Garlic Salt and Black Pepper. Serve with a dollup of Sour Cream.
