Banana Pops

This recipe is definitely a hit at our home. It originally comes from Simple Healthy Tasty and we love it!

Ingredients
  • 6 lg Bananas - peeled and halved
  • popsicle sticks (you can get small wooden craft sticks from the craft store which work great)
  • 1/2 cup Coconut Oil
  • 1/2 cup Peanut or Almond Butter
  • 5 Tbsp Cocoa Powder (or Carrob)
  • 2/3 cup Sucanat or Raw Sugar - powdered fine in blender
  • Pinch of Sea Salt
  • 1/2 tsp Vanilla
  • Chopped Nuts of Choice (optional)

Directions
Slide a craft stick about half-way up into the flat cut side of each Banana. Freeze on a baking sheet overnight or until frozen.

Once bananas are frozen, warm up the Coconut Oil and Peanut Butter in a saucepan until smooth. Add the Cocoa, as well as the Sugar, Salt and Vanilla. Stir until well combined and very smooth with a wire whisk.

Dip each banana into the chocolate sauce and coat well. Return to the baking sheet and allow the chocolate to set up. If needed, return the sheet to the freezer for a few minutes. Coat the bananas a second time, and sprinkle with the nuts if desired. Return to the freezer to allow the chocolate to set.

Store these covered in the freezer, separating each layer with wax paper.
