I know what you are thinking - chicken nuggets are not real food! But guess what - if you make them on your own with quality ingredients, they can be a great meal and your kids will love them. Plus, if you make them ahead of time, they make a quick and easy snack.
Ingredients
- 2 1/2 lbs Chicken (I use breast meat, but thigh meat would be great as well)
- 1 cup Almond Flour (I use 1/2 cup Almond Flour and 1/2 cup Almond Meal)
- 1 cup Grated Parmesan Cheese
- 1 tsp each of Salt, Pepper and Italian Seasoning
and depending on your cooking method:
- 2 Eggs (for frying) or 1/2 cup Butter - melted (for baking)
- Fat for frying (I use Pastured Lard from a lovely farm, but you could also use Tallow or Coconut Oil)
Directions
Cut the Chicken into nugget-sized pieces. Combine the dry ingredients in a shallow dish (I actually split into two dishes because it can get really clumpy as you dredge your chicken pieces, so this way it stays nice and crumbly). Melt the butter or beat the eggs in another shallow dish.
If frying, melt your Fat in a cast iron skillet. I don't measure, but use enough to have maybe 1/2 inch of grease in the pan. If baking, preheat the oven to 375 and cover a baking sheet with foil.
Dip your chicken in the butter or egg, and then dredge it through the dry mix. Place it in the frying pan or on your baking sheet. If frying, cook in batches for 3-4 minutes on each side. If baking, do so for 20-25 minutes, until golden brown.
These freeze beautifully - just reheat at 375 until toasty warm.
