Chocolate Truffles

These are super, super simple - and so incredibly good!

Ingredients
  • 1 cup cocoa powder
  • ¼ cup coconut oil, melted
  • ¼ cup honey
  • ½ cup coconut cream (the cream from the top of an unsweetened can of coconut milk)
  • Coating – additional Cocoa Powder, Chopped Nuts, Shredded Coconut – whatever you would like

Directions
Mix all Ingredients (except coating) in a small mixing bowl with a fork. Be sure to mix the bottom and sides in well. Cover and place in the freezer for 15-20 minutes or until firm.

Place your Coating in a small bowl. Scoop out a small spoonful of the hardened chocolate, gently roll it in your hands, and drop it in the coating. Once you have a couple you can gently swirl the bowl to cover the ball with the coating. Then place the covered truffles on a plate and repeat.
