I love fall, with the weather getting cooler and all the colors on the mountains. But really I love fall because I love soup, and fall is soup weather. This one has become one of our favorites; super simple and the kids even ask for seconds.
Ingredients
- 3-4 Chicken Breasts - cut into bite sized pieces
- 1 stick Butter
- 2 Lg Carrots - diced
- 1 Onion - diced
- 1/4 cup Flour
- 6 cups Chicken Stock
- 1 cup frozen Peas
- 1 cup Heavy Cream
- Salt
- Pepper
Directions
Saute Chicken in a bit of Coconut Oil in a large pot. Remove and save for later. Melt Butter in same pot and saute Onions and Carrots until the carrots start to soften. Add the Flour and cook for 2-3 minutes. Add Chicken Stock in a steady stream, stirring constantly. Simmer, stirring frequently, for 10 minutes. Add Chicken, Peas and Cream. Season to taste with Salt and Pepper. Enjoy!
