I love Shepherd's Pie, but I'm the only one in my family who does. I don't mind eating the whole pan by myself, but I don't like having to make separate dinners for the rest of the family who won't eat my yumminess. So I came up with an alternative. As a bonus, since we try to avoid a lot of starchy foods, there are no potatoes in this.

Cauliflower & Broccoli - Chop Broccoli and Cauliflower to semi-uniform-sized pieces. Toss in some oil (I use peanut or coconut) and season with S&P. Roast at 425 for 15 min. Set aside.
Chicken - Saute in a bit of oil, seasoned as desired, until done. Remove from pan, leaving drippings. Cut chicken to bite-sized pieces. Set aside.
Combine Chicken, Broccoli and Cauliflower in a casserole dish.
Sauce - Saute the diced Onion in the chicken drippings, adding some Butter if needed. Make a rue by adding another 2 Tbsp Butter and the Flour to the skillet. Cook for a bit and then whisk in Milk until the sauce reaches desired consistency. Season to taste, melt in 1 cup Cheese, and pour over chicken and veggie mixture. Toss to combine, then top with remaining Cheese.
Bake for a couple minutes, just to melt the cheese and heat everything back up. Enjoy!
