I am really loving this smoothie lately! It's a quick snack that has some real staying power. This recipe makes enough for 2.
Ingredients
- 2 cups Coconut Milk (or 1 can, if not using homemade)
- 2 Bananas - frozen if possible, so they make the smoothie cold
- 1-2 tsp Vanilla
- 3-4 Egg Yolks (optional - use only if you can get organic, free-range eggs)
- Nutmeg
- Cinnamon
- Optional - may add 1-2 Tbsp Honey, Maple Syrup or Agave Nectar; or 1 pkt Stevia pwdr if desired.
Directions
Puree the Milk, Bananas and Yolks in a blender or with a hand blender. Add Vanilla to taste and blend again. Add Spices to taste.
