Chocolate Coconut Milk Ice Cream

A quick note about Coconut Milk, since I've been posting so many recipes with it - when not using homemade, I prefer the Thai Kitchen brand (NOT lite). Coconut milk is really not all made equally, and so far I've found that this one has the best flavor - and our grocery store here in small-town-ville actually carries it! But use what you can find (as long as it isn’t lite). And I used agave syrup here, but you can use whatever sweetener you like.

Ingredients
  • 3 cups Coconut Milk (1 1/2 - 2 cans)
  • 2/3 cup Cocoa Powder
  • 1/3 cup agave syrup
  • 1 tsp vanilla extract

Directions
Whisk cocoa powder in a small amount of coconut milk, until smooth. Then add the rest of the ingredients and whisk until well combined. Or dump all ingredients together and blend with a stick blender. Make according to your machines instructions.
