Basic Stock

We use stock in a lot of things - rice, soups, etc. It's good for you and adds plenty of flavor. It's really easy to make your own, and that way you know you aren't getting MSG and the like.

Ingredients
  • 1 Chicken Carcass or approx 3 lbs of Beef Bones (short ribs, steak bones, knuckle, marrow and soup bones from the butcher, etc.) - preferably Organic, Grass Fed/Free Range
  • a couple Chicken Feet for chicken stock- if you can get them, these make a great addition to stock; they are filled with good-for-you gelatin (for beef broth, the knuckle bones are where the gelatin is)
  • 1 Onion - Sliced
  • 2 Tbsp Apple Cider Vinegar (the good stuff - Braggs is what we use)
  • 16 cups Water

Directions
Place all ingredients in a large stock pot. Bring to boil, cover and reduce heat. Simmer for 12-36 hrs, adding additional water if needed. Strain through colander, picking out any meat pieces for soups, etc. Cool completely before storing.
