Ingredients
- 1 Chicken Carcass or approx 3 lbs of Beef Bones (short ribs, steak bones, knuckle, marrow and soup bones from the butcher, etc.) - preferably Organic, Grass Fed/Free Range
- a couple Chicken Feet for chicken stock- if you can get them, these make a great addition to stock; they are filled with good-for-you gelatin (for beef broth, the knuckle bones are where the gelatin is)
- 1 Onion - Sliced
- 2 Tbsp Apple Cider Vinegar (the good stuff - Braggs is what we use)
- 16 cups Water
Directions
Place all ingredients in a large stock pot. Bring to boil, cover and reduce heat. Simmer for 12-36 hrs, adding additional water if needed. Strain through colander, picking out any meat pieces for soups, etc. Cool completely before storing.
