I love cookies! And I really love cookies dipped in milk! There was a time when I baked cookies every Sunday evening - a double batch - and they would be GONE in less than 4 days, and we didn't even share them with the kids. Seriously ... addicted! But alas, we have changed our ways. I thought in order to be grain-free, I was going to have to live deprived of cookies. Not true! I found these beauties, and they are divine ... and totally dip-able! And they are even good with Craisins instead of the chocolate chips, if there happen to not be any in the house.
Ingredients
- 1 stick plus 2 Tbsp Butter - softened
- 1/3 cup Honey (or 1/3 cup Applesauce plus 4 packets Stevia)
- 1 1/2 tsp Vanilla
- 2 eggs
- 2 1/2 cups Almond Flour or Almond Meal
- 1/4 tsp Baking Soda
- 1/8 tsp Salt
- 1/3 cup Cocoa Pwdr
- 1/8 tsp Cinnamon
- Chocolate Chips
Directions
Blend Butter, Honey, Vanilla and Eggs together until smooth. Add remaining ingredients and mix well. Fold in Chocolate - as much as YOU would like.
Drop by spoonfuls onto parchment-lined or greased cookie sheet. Bake at 350 for 10-12 min. Cool them, then EAT them!
