Curry Lentils

Even if you don't like Curry or Lentils, you should really try this recipe. It's awesome, plus it's super easy! It originally came from our friend Dr. Cindy, but we've modified it here and there. Seriously, give it a shot.

Ingredients
  • 1 cup Lentils
  • 2 1/2 cups Stock or Water
  • 1 med Onion - diced
  • 3-4 cloves Garlic - minced
  • 1 tsp Cumin           \
  • 1 tsp Tumeric          or 2-3 tsp Curry Pwdr instead of these 3
  • 1/2 tsp Coriander   /
  • 2-3 Tbsp Tomato Paste
  • 1 can Coconut Milk
  • S&P to taste

Directions
Place Lentils in a pan with Water or Stock. Bring to a boil, then reduce to med/low and cook partially covered for 10-15 min or until done.

Saute Onion and Garlic in a generous bit of Coconut Oil or Butter for 5-6 minutes. Add Spices and continue to cook. Add Tomato Paste and mix it with the onions as much as you can. Add Coconut Milk and stir to combine well. Simmer for 2-3 min. When Lentils are done, combine them with sauce and stir. Add S&P to your taste.

Enjoy over Rice.
