Stir Fry Veggies over Rice

This is such a simple recipe, and so good!

Ingredients
  • 3-4 Tbsp Butter
  • 1 Yellow Squash - Sliced
  • 1 Zucchini Squash - Julienned
  • 1 sm Green Pepper - Sliced
  • 1 sm Red Pepper - Sliced
  • 1 Onion - Sliced
  • 1 Carrot - Julienned (or a lg handful matchstick carrots)
  • 2-3 cloves Garlic - minced (optional)

Directions
Melt butter in Wok or Cast Iron Skillet. Add Onions and Carrots and saute for a couple minutes over med high heat. Add remaining ingredients and stir fry til cooked to desired consistency. Serve over Rice.
