This is such a simple recipe, and so good!
Ingredients
- 3-4 Tbsp Butter
- 1 Yellow Squash - Sliced
- 1 Zucchini Squash - Julienned
- 1 sm Green Pepper - Sliced
- 1 sm Red Pepper - Sliced
- 1 Onion - Sliced
- 1 Carrot - Julienned (or a lg handful matchstick carrots)
- 2-3 cloves Garlic - minced (optional)
Directions
Melt butter in Wok or Cast Iron Skillet. Add Onions and Carrots and saute for a couple minutes over med high heat. Add remaining ingredients and stir fry til cooked to desired consistency. Serve over Rice.
