Avocado Chutney

This recipe comes from Alissa Cohen whose book 'Living on Live Foods' is great. She's a raw food guru, and has some great recipes that we use in our everyday, even though we don't eat 100% raw like she does.

This recipe is yummy and fresh and filling. So good!

Ingredients
  • 1 lg Avocado
  • 1/2 cup raw Corn Kernels
  • 1/2 sm Onion - finely chopped
  • 1 Red Bell Pepper - diced
  • 1/4 cup Olive Oil
  • 2 cloves Garlic - minced
  • Juice of one Lime
  • 2 tsp Cumin
  • 2 tsp Oregano (fresh is best here)
  • 1 tsp Chili Powder
  • 1 Tbsp Cilantro - diced
  • S&P to Taste

Directions
Combine Avocado, Corn, Pepper and Onion in a large bowl. In separate bowl, combine the remaining ingredients and mix well. Pour the Oil mixture over the veggies, stir and serve.
