Kale is one of those cruciferous vegetables that are so good for you but that so many people avoid. I don't know why, because Kale is great in so many ways. We prefer it in our Green Smoothies over any other greens, and I also make a different kale chip that I think are great (Dr. Burke doesn't completely agree, but that's okay). These baked Kale Chips, on the other hand, we all love. Give them a try. They really are a great alternative to the deep-fried-in-nasty-bad-for-you-oils-carb-filled-potato-chips.
This really is so simple:
- Preheat oven to midway between "Warm" and 200, depending on your oven (mine runs a bit hot, and since you want to just dry these out more than cook them, it needs to be pretty low - they'll burn if it's too hot).
- Rip up Kale, removing stems.
- Massage Kale with Olive Oil and a bit of Salt (be careful with the salt because it concentrates when they dry).
- Spread on baking sheet and bake until totally crispy - about 30 min - flipping periodically (every 5-10).
- Cool, then eat.
We actually make these in our dehydrator, but I realize that most people don't have one. They work great in the oven as well.
