Crunchy Cookies

These cookies are filled with protein and are super yummy. The original recipe comes from Sarah, The Healthy Home Economist, but I make them just a little different. They do take some time, but it isn't labor intensive time - they have to dry out in the oven for a few hours to get crunchy. Give them a try.

Ingredients
  • 8 Egg Whites
  • Salt
  • 1 cup Honey or Maple Syrup, or 1/2 cup and 4-5 drops of Stevia
  • 1 tsp Vanilla
  • 2 Tbsp Cocoa Powder
  • 4 Tbsp Arrowroot Powder

Directions
Whip Egg Whites with the Salt until stiff peaks form. Add Vanilla and Honey while mixer is running. Sift together Cocoa and Arrowroot, and add it a bit at a time. Mix well. Spoon small circles onto a cookie sheet lined with parchment paper. Bake at 200 for 30 minutes, then turn it down as low as your oven will go for an additional 3-4 hours until crisp. Alternatively, and this is how I prefer to make them, place them in your dehydrator on the 'jerky' setting for a total of 6-7 hrs. When 'cooking' them in the dehydrator, they don't get crisp until you take them out and let them cool, but they will get there.
