Kabobs

You can grill or roast these for a delicious summer meal. My favorite is the pineapple, especially when taken in a bite with a red onion. Yummy! We usually do vegetarian ones, but a little chicken (especially thigh meat) makes a great addition.

Ingredients
  • Red Bell Pepper
  • Green Bell Pepper
  • Red Onion
  • Fresh Pineapple (canned will do, but fresh is SO much better)
  • Grape or Cherry Tomatoes
  • S&P

Directions
Cut the Veggies (and chicken if using) into bite size pieces. Salt and pepper to taste and alternate them on skewers (using a separate skewer for the meat so it can cook longer without the veggies getting too done). Grill or roast in oven until veggies are tender crisp. Serve with Rice.
