Sausage and Peppers and Onions - Oh, My!

I love sausage. Unfortunately, I can't always find good stuff - you know, no nitrates, added sugar, etc.. I know I shouldn't, but occasionally I still indulge in the not-so-good stuff because I'm weak. But if I could find good stuff on a regular basis, this would probably be one of my more frequent meals. It's perfect for summertime when you don't want to heat up the house with cooking.

Simply slice a colored bell pepper - my favorites are red and yellow -  and an onion. Saute them in some butter. Slice a smoked sausage and throw the slices in with the veggies. Toss them together and keep it all cooking until veggies are done to your preferred tenderness.

Serve with a tossed salad and you've got the perfect (in my mind, anyway) summer meal. Yum!
