I needed a veggie the other night for dinner, but wasn't in the mood for the broccoli that was in my fridge. So I took my 2 lb bag of carrots, sliced them down the center, doused them with a bit of oil and S&P, laid them in a pyrex and roasted them for 15-20 min at 425, then sprinkled some Parmesan Cheese on them. They were SO good! My oldest ate probably 1/2 lb himself.
