Tex Mex Guacamole Burgers

I love me a good burger! Who doesn't, right? And these ones are extra good.

First, make some Salsa (this is yummy salsa, trust me, but if you don't want to make it then you can use one you already have).

Ingredients

  • 4 Tomatoes - chopped
  • 2 Scallions - chopped
  • 1 clove Garlic - or more if you prefer
  • 1/2 cup fresh Parsley
  • 1/2 cup Cilantro
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Olive Oil
  • 1 Tbsp Lime Juice
  • 1 tsp Cumin
  • 1 tsp Salt
  • Jalapeno to taste

Directions
Place all but the Tomatoes and Scallions in a food processor and process until well ground. Add the tomatoes and Scallions and pulse chop until everything is diced and blended. Taste and add more salt or jalapeno if needed.

Next, form as many Burgers as you need, using good beef that still has a good amount of fat (80/20 is what we usually use). Mix some of the fresh Salsa into the meat, as well as S&P to your liking. We also usually add an Egg. Grill to your desired done-ness.

While the Burgers are grilling, make your Guacamole. Mash and Avocado or two and splash in some Lime Juice and Salt to taste.

When your Burgers are done, top them with a dollop of Guacamole and Salsa, and serve with a fresh salad and a side of your favorite veggies. We really like these with grilled or sauteed squash.
