I've been reading lately about BPA and how bad it is for us but how it is found in so many things - packaging mostly, including plastics and canned goods. One of my favorite things, coconut milk, had very few BPA-free options but I think I've found one that I love. Aroy-D makes coconut milk and coconut cream in tetra cartons (basically cardboard), and it's great! Today I used the cream to make a kind of mousse, just for fun, and it was so good!
Ingredients
- 1 qt Coconut Cream
- 1 tsp Vanilla
- 1/4 tsp Salt
- Sweetener of Choice - I used 8 small packs of Stevia, but use whatever you like to your taste
- Zest and Juice of 1 Lime
Directions
Whisk all ingredients together in a large bowl. If using Cocoa, whisk the powder into a small amount of coconut cream until well combined before adding to the remaining ingredients. Refrigerate to your desired firmness. Then, indulge. :) We just ate it by the spoonful, but you could use it as a topping or dip for fruit, etc.
