Easy Cheesy Crackers

We try not to eat a lot of wheat around here, but in my search for snack foods for my kiddos I have come across this yummy recipe for homemade Cheese It crackers that I have deemed acceptable. It would be even more acceptable if I took the time to sprout the wheat and then grind it for the flour, but we'll get there. Anyway, these crackers are a big hit around here. They honestly taste like Mac and Cheese and are great!

Ingredients

  • 8 oz Grated Cheese - the sharper the cheese, the cheesier the crackers will taste
  • 10 Tbsp Butter - cut into Tbsp-sized pieces
  • 2 cups Flour

Directions
Place all ingredients into a food processor and blend. Be patient because this can take some time. It should eventually turn into a ball of dough, or if your processor is as retarded as mine is, it will simply crumble into little bits and you'll have to squeeze them into a ball.

Separate the dough into two parts. Place one on a baking sheet and flatten with your hands as much as possible. Cover with plastic wrap and then, using a mason jar, roll it out until it is 1/4 inch thick. My kids like to use my tiny cookie cutters and make some fun-shaped crackers, but to make it simple just take a pizza cutter and cut the whole pan into small squares. Pierce each cracker with a fork and sprinkle salt on top if desired.

Bake at 350 for 10 min and enjoy. Careful, you'll be hooked!
