I LOVE, LOVE, LOVE these bars! So do my kids, so does Burke, his mom and anyone else who tries them! They are just the right amount of sweet when I need something, and they have plenty of good fats from the nuts and coconut that I'm not hungry again right after eating one. Seriously, try them and you'll LOVE them, too!
Ingredients
- 1/4 cup Coconut Oil (or so - I just scooped some in the pan)
- 1/2 cup Honey (or so - I just poured some in)
- 1 tsp Vanilla
- 1/2 tsp Salt
- 1 Tbsp Cinnamon
- 3 cups mixed Nuts (Cashews, Pecans and Almonds are my favorites to use)
- 1 cup Craisins (or other Dried Fruit)
- 1/2 cup Mini Chocolate Chips
- 2 cups Shredded Coconut
Directions
Use the food processor and chop the Nuts to your desired size. Now do the same with the dried Fruit. Combine them both in a bowl with the Coconut and Chocolate. Mix well.
In a saucepan over medium heat, combine the Oil, Honey, Vanilla, Salt and Cinnamon. Cook until the mixture bubbles, then pour over the fruit/nut mix. Stir well to combine.
Dump the mixture into a parchment or saran wrap lined 9x13 pan and press - a lot. When you think you're done, you're not - do it some more.
Cool 2-3 hours (or freeze for an hour if you are impatient like me), then remove from the pan and cut into bars.
