Beans and Quinoa

I must really be craving quinoa - this is the second dish lately. Good stuff! We'll have this as a main dish with a fresh salad and Roasted Veggies on the side, or as a side dish with chicken, or try it wrapped in a tortilla or lettuce leaf or spring roll wrapper, all with some avocado. It's even pretty good cold.

Ingredients
  • 1 Lg Onion - diced
  • 5 cloves Garlic - minced
  • 1 1/2 cup Quinoa - soaked for at least 1 hr and rinsed well
  • 2 1/2 cups Stock
  • 1 3/4 tsp Cumin
  • 1/4 tsp Cayenne
  • 3 cups Frozen Corn
  • 3-4 cups (or 2-15 oz cans - rinsed) Black Beans

Directions
In a medium saucepan, saute the Onion and Garlic in a bit of Butter. Add the Quinoa and Spices, as well as the Stock. Stir well and bring to a boil, then reduce the heat, cover and simmer for 20 minutes. Stir in the Corn and Black Beans and allow them to heat up before serving.
