Broccoli and Leek Quinoa

This is a very simple and tasty lunch, or as a main or side dish for dinner.

Ingredients
  • 2 Leeks - Remove green tops and slice thin, then clean well
  • 1 bunch Broccoli - chopped
  • 1 cup Quinoa - rinsed and soaked at least 1 hour, if not longer
  • 2 cups Chicken Stock
  • 2 Tbsp Butter
  • S&P to taste

Directions
Drain and rinse Quinoa. Add to pot with Broth and simmer until done (about 15-20 min). While quinoa is cooking, saute Broccoli and Leeks in Butter. Season to taste with S&P and any other spices you like. Saute until soft. Combine quinoa and veggies and enjoy.
