Onion Soup is seriously so easy, so rich and so yummy - and really good for you. Lots of nutrients in here, especially when using homemade stock.
Ingredients
- 3 large Onions – sliced or diced
- Butter or Coconut Oil
- 1 quart Chicken Stock
- 1 quart Water
- Salt to taste
Directions
Melt a Tbsp or 2 of Butter or Coconut Oil in the bottom of a soup pot. Add the onions and saute over medium heat for about 45 min, stirring occasionally and keeping it covered to help the onions sweat. Add Broth and Salt. Bring to a boil, then reduce heat, cover and simmer for another 30 min.
This is excellent served with crusty buttered bread (unless you're cleansing). Yum!
For kids (like mine) who claim they don’t like onions, I puree this with my immersion blender. Works like a charm.
